Kale Quinoa Salad

Ingredients
For the salad
  • 2 cups kale, chopped
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
For the dressing
  • 3 tbsp kewpie mayo
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp dill
  • 1 tbsp red wine vinegar
  • 1 tbsp pepperoncini juice
  • Salt and pepper to taste
Directions

Combine all the dress ingredients in a jar and shake well to emulsify.

In a large bowl, combine the kale, quinoa, cherry tomatoes, red onion, and feta cheese.

Drizzle the dressing over the salad and toss gently to combine.

Serve immediately or let it chill in the fridge for 30 minutes to allow the flavors to meld.
